This is all highly dependent on the person. 
 
If he is pretty serious about his religion (goes to church every sunday, went on a mission when he was 19-20, doesn't drink alcohol/coffee, doesn't smoke, goes to institute [weekly religion class], etc.) - then odds are is that he will probably want to marry a mormon girl. Mormons are encouraged to marry those of their own faith. You can get a sense about his seriousness by asking him about his church. Most mormons when asked about their church will be very willing to talk about it. 
 
You will find that there are a higher percent of Mormon guys who are nice - so not sure that helps.
