I know that mormons are counceled not to drink coffee, but has there been any specific counsel from church leaders about not drinking mocha, latte, or cappuccino??

All of those are based from the coffee bean in and drank in various concentrations depending how much water is being used to dilute it. So it's still coffee.

Since all of these drinks are brewed from the coffee bean they are still prohibited. As well as decaffeinated coffee and tea. It doesn't matter the concentration it matters that the coffee, tea, alcohol is present. Even trace amounts of coffee, tea, and alcohol are considered potential violations.  
 
Many Mormons will not cook with wine or use sauces that contain wine or alcohol in them in fear that the alcohol will not totally cook out (which it never does.  
 
Some even go as far as to avoid cookie made with vanilla extract because of the alcohol in vanilla extract.
