Our Priesthood does not require a theological background. There is a Mormon Seminary for all teenagers during there High School years, but this is not a theological degree.  
 
The only persons required to attend a seminary for LDS is brethren who desire to be a Military Chaplin (the theology degree is a military requirement not a Church requirement). 
 
Remember that of all the Apostles, only Paul had a background in theology, before his conversion he was a Pharisee and presenter of Christians.  
 
The rest of the Apostles and Jesus Christ were not professional theologians. Christ was a carpenter, Peter, Andrew, John and James were all fishermen. Matthew was a tax collector (and back then like today no one liked tax collectors).  
 
We know that God calls who he wills, and in most cases he calls non theologians. He didn't call the Pharisees as Apostles and they were the greatest and brightest theologians of there time.
