My wife is mormon and I am considering joining the LDS Church. I have noticed that most of the things the church requires as saving ordinances are outward expressions of inward beliefs. An example of this would be baptism or going through the temple to take out endowments. Do you think God is really all about the physical work or does this just help each person understand and process their faith so that it can then enter into their hearts as well?

1. God does care about the physical as well
I fully beleive that God does care about our physical work in the temple, without that physical work millions of his Spirit Children that never heard of the Gospel would not be able to receive the saving ordinances by proxy.  
 
We are commanded to find and perform the saving ordinances on there behalf in the Temple so they can choose for themselves in the Spirit World to accept of reject them. Without the physical work the world would be smitten with a curse when Christ returns as foretold by the Old Testament Prophet Malachi. 
 
You are also correct thought that all of the ordinances are physical representations of deeper spiritual messages, this is the beauty of the message, if you allow the Holy Ghost to work through you there deeper meanings bring to the closest to Heavenly Father that a mortal man can get.  
 
Like Christ said many will be told but never hear, will be shown but never see. Just going through the physical motions are useless unless you also go through the spiritual transformation that happens through the Holy Ghost when you enter those covenants through the Holy Ordinances of the Gospel. 
 
So yes Heavenly Father does care about the physical acts very much, so much that he specifically gave us the very acts and word for word prayers for the ordiances to be correct in his eyes.  
 
He also cares that you do not simply go through the motions but find the deeper spiritual meanings of each ordinance and that those spiritual moments bring you closer to him so you can continue on the straight and narrow path to the Celestial Kingdom and Exaltation!
